My new Name!

Well, I decided not to change the name completely as I couldn't think of anything that I loved and wanted to make a change quick as my FB name is Amy's Cupcakes - Puerto Rico. It was becoming confusing so I decided to go with: Amy's Chicagoland Cupcakes.

Minis!

I was inspired today and tried a filling for my minis. Had to make Lemon cupcakes and the filling is so good that I had to find a way to use it. Thought of brushing the filling on top of the cupcake but under the frosting. Just not enough of the lemony goodness! So I went ahead and filled them, as I would a regular cupcake. And it worked! A little bit of filling for a little cupcake. They are just as good as the regular size! Will now add minis with fillings to my menu. I can't do fresh fruit fillings but can do anything that is like a sauce (lemon, lime, caramel, ganache, etc...)

Also, today, I made cupcakes for the teachers: Lemon, Chocolate Brownie and Cookies and Cream.

So, I'm thinking about changing my business name. Any suggestions? My problem is that amyscupcakes.com is already taken so I want a name that has an open website. I could keep Amy's Cupcakes and add Chicago or Chicagoland or go with something completely different. Would love to hear suggestions! I'm offering 1 dozen cupcakes to the person whose name I choose (sorry, only a local offer - will send a different dessert to an out of state winner).

New Flavors

I've created a new flavor: Caramel Apple! Originally, I experimented with Butterscotch. I wasn't thrilled with the results, didn't have time to fix the butterscotch so I mixed a few things and came up with something new. I took a Vanilla cupcake, filled it with some cooked apples (seasoned for apple pie) and caramel. Then, Vanilla frosting on top, along with an apple slice and some caramel drizzle and Voila!

Having eaten the last one tonight, I'd say I'm happy with them :)


Also, I recently had an order for Pineapple cupcakes so I dried some fresh pineapple slices as the garnish. Leaving enough leftovers for dried pineapple treats to snack on!

I've MOVED!

Maybe you wondered why it's been so long since I've written. Or maybe not :) But if you have wondered, it's because I've moved. Before Puerto Rico, I lived in the Chicagoland area. I have recently moved back. Now that I have my mixer and mixing bowls from storage, I've started baking and am back in business!

NEW Flavors

Unfortunately, I don't have pictures (sorry!), but I've added a new flavor: Strawberry Shortcake

I made this for a family event and it turned out great. Made to be similar to Grama's Strawberry Shortcake, I paired a Vanilla cupcake with strawberries and whipped cream. Yum!

Soon, I'm going to test the recipe out with a sponge cake. For now, it will be offered with a Vanilla cupcake.

Also, already created but never added to the menu is Chocolate Peanut Butter. Chocolate cupcake with Peanut Butter frosting, topped with mini chocolate chips and peanut butter cups. One of my favorites! Of this, I do have pictures... just not with me right now.

I've, also, done a bit of re-organizing my flavors list so please check it out!

New Flavor!

Well, due to a request, I decided to try Salted Caramel cupcakes. I've tasted them at bakeries before but wasn't blown away. I did like the caramel but I didn't quite get adding the salt.

So... I have now changed my mind! I decided to make mine extra-caramelicious: Brown Sugar cake with home made Caramel filling, Caramel frosting, a Caramel drizzle and some Sea Salt flakes on top. Yum! They were so sweet, decadent and wonderfully caramel. And the salt blended but added a little crunch... didn't know it would work so well.

I've definitely added them to the menu, either with Caramel or Vanilla frosting, depending on just how caramelly you want to go.
